Divide the ground beef into 4 equal portions. Roll each into a loose ball without over-packing.
Caramelize the Onions:
Heat the Blackstone griddle on medium heat. Add butter and olive oil, then stir in the sliced onions. Cook, stirring occasionally, for 15–20 minutes until golden brown. Add sugar for extra sweetness, if desired. Transfer to a small bowl and set aside.
Toast the Buns:
Lightly butter the insides of the burger buns and place them on the griddle until toasted golden brown. Set aside.
Cook the Smash Burgers:
